About the event
The meat industry is in need of a MAJOR revolution. Current practices of inhumane living conditions and feed chocked full of antibiotics and GMOs are not only unethical for the animals and humans that go on to consume those animals, but they are NOT sustainable and terrible for the environment. Supporting farms like Signature Springs Farm is part of starting that revolution! Farmer TJ uses regenerative practices to raise animals in a way that benefits the land. His family farm is located on the east side of San Antonio where the animals are raised ethically in the most natural environment possible. Come join us as we partner with Farmer TJ at Signature Springs Farm to learn about raising and processing chickens in a way that is not only better for your family, but better for the animal and the environment.
This workshop also includes a farm-to-table lunch of Roast Beef Sandwiches on Sourdough and locally sourced sides.
You will leave this workshop with:
- One whole chicken that you process yourself.
- The knowledge to raise and process your own meat birds.
- A better appreciation of purchasing meat locally
Did we mention Farmer TJ used to be a chef? We know that most of us are on a budget and pasture raised chicken is more expensive than what you can buy at the grocery store, which is why we would like to teach you how to make a few simple changes to the way you purchase and use chicken that will help bridge the cost gap. This is why we are also offering our "Bird is the Word" class the following Friday (June 16) from 6-9 in which Farmer TJ will teach you to deconstruct a whole chicken (break it into breasts, thighs, wings, etc) and make some delicious dishes out of the different cuts. We will be cooking and enjoying a farm-to-table dinner of Chicken Marsala with Scratch-made Sourdough Pasta. We will also teach a quick and easy whole bird food-prep hack to make chicken for your weekly meals and turn the bones into broth with minimal prep time. You will also leave with ALL OF THE MEAT from the chicken that you deconstruct in class.
The cost for the processing workshop alone is $100 and you leave with a whole chicken.
The cost for the processing workshop AND the "Bird is the Word" Class is $180 and you leave with a whole chicken, and the meat from a second chicken we deconstruct in class.

DISCLAIMER: Chickens will be slaughtered and then processed in this workshop. Farmers TJ and Kyle will slaughter the chickens and teach us how to process them afterwards. However, you will not be required to do anything you aren't comfortable with. If you would rather come and watch the process instead of participating please reach out and we can work to accommodate you!

For an additional $80 take our class the following Friday to learn how to deconstruct a chicken and make the most of your meat. We will be preparing and enjoying a farm-to-table dinner in class and you will leave with an additional chicken that you deconstruct in class.
